Cajun Shrimp Pockets!

Time to sit back and unwind… 

Give me Will Smith and a summertime grill sesh any day!

These Cajun Shrimp and Veggie Pockets are soooooo easy and soooooo freaking delicious!!  Literally the hubs and I had to negotiate who got to eat the leftovers.. epic!

 

Here’s what you’ll need:

Wild Caught Shrimp (8-10 large per pocket/person)

Zucchini peeled & chopped (1/3 cup per pocket/person)

Scallions chopped (eyeball it.. about 1 tbsp per pocket/person)

Grape Tomatoes halved (about 5 halved per pocket/person)

Chicken Andouille sausage (1/2-1 sausage per pocket/person)

Mushrooms  (about 1/4 cup sliced per)

Carrots peeled and sliced thin (about 1/4 cup chopped per)

Corn (non-gmo, about 1/4 cup per)

Refined coconut oil (1 tsp per)

Cajun seasoning (about 1 tsp per – I like Flavor God Sweet and Tangy, but you can make your own too!)

One you have everything chopped and prepped, just pile up the ingredients on a large piece of tin foil, mix together with your hands, and fold it up into a little pouch!

Then, have your hubs put them on the grill!

 

He’s cute huh? 😉

Hubs says he grilled the pockets for about 20 minutes.. and “they were amazing!”

TIP:  You can easily prep this the morning of a get together and just pop them on the grill once your guests arrive!
